Bananas Foster


1/2 cup butter or margarine

1 1/2 cups brown sugar

4 medium bananas, ripe and sliced

Juice of a lemon

1/4 c. rum

1 to 2 tbsp. almond or vanilla

tsp. Cinnamon

Dash nutmeg

Vanilla ice cream

Melt butter in large skillet; add brown sugar and cook over medium heat until bubbly. Peel bananas and brush with lemon juice. Add bananas to brown sugar mixture and heat 2 to 3 minutes, basting constantly. Stir in vanilla or almond extract, cinnamon and nutmeg. Pour rum in a small saucepan and heat until warm. Ignite rum with long match and pour over banana mixture. Baste bananas until flame dies down. Serve at once over ice cream.
