Indian Style Vegetables


3 c. chopped, boiled potatoes or eggplant or cabbage
1 c. frozen peas, defrosted
2 tbsp. cooking oil
1 tsp. finely chopped green pepper
1 clove garlic, finely minced
1 tsp. salt
1/2 tsp. cumin seeds
1 tsp. parsley, finely chopped
1/2 tsp. turmeric powder
1 tbsp. chopped onion

On low heat in a medium non-stick pan, add cooking oil, cumin seeds, garlic, green pepper; sauté for 1 to 2 minutes. Add turmeric powder and onion; sauté for 3 to 4 minutes. Turn to medium heat; add potatoes (or eggplant or cabbage), peas, and salt. Sauté for 5 to 6 minutes. Garnish with parsley before serving.
