Leg of Lamb with Applesauce Mint Sauce


6 lbs. lamb meat or leg

cup flour

Shortening to sear meat

1 c. vegetable broth, add this to meat after simmering

Salt and pepper to taste

lb. butter

2 tsp. garlic powder

Sear leg of lamb in shortening. Place lamb, fat side up, in a shallow roasting pan. Combine garlic powder and butter; brush butter mixture evenly over lamb. Insert meat thermometer, making sure it does not touch fat or bone. Bake at 325 degrees for 2 1/2 hours or until meat thermometer registers 160 degrees. . Baste frequently with butter and garlic while roasting. Let stand 10 minutes before carving. Serve with Applesauce/Mint Sauce and garnish with fresh mint.

Applesauce/Mint sauce

1 1/2 c. applesauce

1/2 c. mint jelly

1 tsp. lemon juice

1/2 tsp. salt

Mix all ingredients. Bring to a boil; simmer for 10 minutes.
