Lemon Poppy Seed Muffins


2 c. flour
3 tsp. poppy seeds
1/2 tsp. salt
1/4 tsp. baking soda
1 c. sugar
1/2 c. butter
2 eggs
1 c. lemon yogurt
2 tbsp. lemon zest

Stir together flour, poppy seeds, salt and baking soda. In a separate large bowl, cream butter and sugar. Beat in eggs, one at a time. Beat in yogurt and lemon extract. Stir in flour mix until moistened. Bake in muffin tins, either greased or paper lined, at 400 degrees for 15 to 20 minutes. You may also use plain yogurt and 1/2 teaspoon fresh lemon juice in place of the lemon flavored yogurt.
