My "Made-up" Recipes
I'll add to them as the inspiration hits me!





PIZZA BALLS


1 lb. hamburger
20 pieces pepperoni
2 tsp. Italian seasoning
½ large bell pepper, chopped finely
½ yellow onion, chopped finely
2 cloves garlic, pressed
1 ½ tsp Italian sausage seasoning (optional)
1 tsp. black pepper
2 Tbsp. butter or olive oil for sautéing vegetables and garlic
½ cup Bisquick
3 tbsp. flour
½ cup marinara sauce
8 oz package of shredded cheese…I used a mix of cheddar and mozzerela


Preheat oven to 400 degrees. Sauté onion and peppers in oil or butter and add pressed garlic for last five minutes of sautéing. Don’t let your garlic burn. Add raw hamburger to cooled vegetables and stir. Add cheese and stir. Add marinara and stir. Then add your Bisquick and flour. (I added flour to get the right consistency because the Bisquick is rather salty, as is the pepperoni). Use a cookie scoop if you have one to put them on a cookie sheet. Cook between 17-20 minutes, depending on how hot your oven gets. This recipe can be manipulated using chopped mushrooms with the veggies, or maybe bacon instead of pepperoni…use your imagination. Watch them in the oven as the bottoms tend to burn.





Blueberry Muffins


1/2 cup unsalted butter
1 1/4 cups white sugar
1/2 teaspoon salt
2 eggs
2 cups all-purpose flour, divided
2 teaspoons baking powder
1/4 cup milk
1/4 cup sour cream
1 pint fresh blueberries - rinsed, drained and patted dry
2 tablespoons brown sugar

Preheat oven to 375 degrees.
In a large bowl, cream together the butter, 1 1/4 cups sugar and salt until light and fluffy. Beat in the eggs one at a time. Add the milk and sour cream, mixing just until incorporated. Mix together 1 3/4 cups of the flour and baking powder. Mix the whole blueberries with the remaining 1/4 cup of the flour, and fold into the batter. Sprinkle tops lightly with sugar.

Bake oven for 30 minutes, or until golden brown, and tops spring back when lightly tapped.
