Pickled Pea Salad


1 (15 oz.) can black eyed peas, drained
1/3 cup vegetable oil
1/8 cup white wine vinegar
3 tbsp. chopped onion
1 clove garlic, finely minced
1/8 tsp. pepper
4 dashes Insanity Hot Sauce
Onion rings
Green pepper rings

Combine first 7 ingredients in a large bowl, stirring well. Cover and marinate in refrigerator 3 days. Before serving, garnish with onion rings and pepper rings.
